Hariyali pulao

This "Hariyali Pulao" recipe is a simple rice preparation. The coriander paste plays a vital role to enhance the flavour as well as provides vitamin a and c. 


HARIYALI PULAO

Servings: 6
Ingredients:

Rice - 2 cups
Baby potato - 200 gms
Sliced onions - 2
Ghee - 4 tbsp
Bay leaves - 2
Cinnamon - 1" piece
Cardamoms - 3
Cloves - 3
Salt – as per taste
Green chilies - 4
Garlic - 7 pods
Ginger - 1" piece
Mint Leaves – ½ cup
Coriander leaves – 1 cup
Coriander leaves – 2 tbsp, chopped for garnishing
Lemon juice – 1 tbsp

Preparation:

First, you need to grind all the ingredients (green chili, garlic, ginger, coriander leaves, mint leaves, lemon juice) for making spice paste.

Then peel the baby potatoes, prick them all with a fork, add some salt and keep aside.

Wash the rice, soak it for 30 minutes and drain the rice.

Heat the pan with ghee (clarified butter) in a pan and fry the onions till they becomes light golden brown.

Add the whole spices (bay leaves, cinnamon, cloves) and fry for one minute and mix the spice paste and fry for another minute.

Add the potatoes and fry for another 5 minutes and then mix the rice and salt as per your requirement. Stir and mix well altogether well and add enough water to cook the rice. The water quantity should be doubled the rice quantity.

Cover with a lid and cook till the rice is tender.

Garnished it with coriander leaves and your "Hariyali Pulao" is ready to serve. Serve with curds or raitas
