This is a mouthwatering yellow colored sweet rice
recipe, popularly known as Yellow Polao
– A veg Rice preparation. This used to be our special preparation during
special celebration days, and I remember how much satisfaction we had after
having this preparation alongwith Steamed Hilsa, Mutton Kasha and lastly
Chutney. This a simple to prepare but so far the taste is concerned it is
unique in its nature and definitely touch your heart. The other pulao (which
I’ll share with you soon ) i.e, Zafrani Pulao is very similar to this, but this
Yellow Pulao requires turmeric powder instead of saffron and does not require
kewra/rose water and above all it is sweet in taste.

YELLOW PULAO - A VEG RICE PREPARETION |
Servings: 5
Ingredients:
Fine Rice preferably
Basmati - 3 cups
Ghee – 4
tbsp
Cashew Nut
whole – 50 gms
Bay Leave –
2
Cinnamon
stick – 2” size, slightly crushed
Black
Cardamom – 1, slightly crushed
Green
cardamom – 6 to 7 pieces, slightly crushed
Cloves – 8
pieces, slightly crushed
Black pepper
whole – 6 to 7 pieces, slightly crushed
Stone Flower
– 1, slightly crushed
Mace – 1
floret, slightly crushed
Turmeric
powder – 1 tbsp
Saffron –
1/4th tbsp
Salt – as
per taste
Preparation:
Wash and
soak rice for 30 mints. Drain the water at the time of adding the rice for
making Polao.
In a pan add
ghee and heat it. Add cashew and fry till it becomes light brown and remove it.
Add bay leaves and crushed Whole Spices like cinnamon, black cardamom, green
cardamom, cloves, black pepper, stone flower and mace. Sauté till fragrant.
Add Turmeric
Powder, Salt and Sugar and fry for another 3 or 4 mints. Add washed and drained
rice in it. Mix rice well with all the ingredients. Cook for 5 minutes with the
rice.
Add water
(at the Ratio, Rice : Water = 1cup : 2
cups) and stir gently occasionally with a fork in high flame. When it
starts boiling reduce the flame and add saffron water (saffron mixed with ½ cup
of warm water). Let the water evaporates completely and when the rice becomes
dried up, your Yellow Pulao is
ready.
You can have
it with any Meat Recipes, Steamed Hilsa or Vegetable recipes etc.
